Turkey Chili

This easy recipe is perfect for a crowd or to freeze for leftovers. Serve with corn muffins and bowls of sour cream, scallions, onions and grated cheddar.

1 tablespoon olive oil
4 cloves of minced garlic
1 small white onion, chopped
1½ pounds of ground turkey
1 5oz. can of tomato paste
1 28oz. can of chopped tomatoes
1 28oz. can of tomato sauce
1 28 oz. can of tomato puree
3 15oz. cans of kidney beans
1 tablespoon of salt
3 tablespoons of balsamic vinegar
3 tablespoons of chili powder
1tablespoon of cayenne
1 teaspoon of sugar
½ cup red wine
1 chopped green pepper
Ground pepper to taste

Heat olive oil in large Dutch oven, add onion and cook until translucent, add garlic and cook for 2 minutes. Add ground turkey and combine with garlic and onion. Lightly salt and pepper the mixture. Once turkey has browned remove pan from heat.

Add all remaining ingredients except the green pepper and bring mixture to a simmer. Simmer covered for 30 minutes and then add green pepper, simmer covered for additional half an hour then serve.
