Mini Turkey Meat Loaves
Makes 4 Servings
2 tablespoons extra-virgin olive oil
1 garlic clove, minced
1 large onion, finely chopped
1½ pounds ground lean turkey
2 egg whites
¾ cup bread crumbs
1 tablespoon half and half
1 tablespoon worcestershire sauce
Salt and pepper
Sauce
1 cup ketchup
1/3 cup dark brown sugar
1½ teaspoons Worcestershire Sauce
Salt and pepper
Preheat Oven to 400°
Lightly oil (8) 3oz ramekins (a muffin tin may also be used). In a skillet, heat 2 tablespoons olive oil.
Add the onion and garlic; season with salt and pepper and cook over moderate heat until softened, about
10 minutes. Let cool.
Add the turkey, onion and garlic to a large bowl. Add the egg whites, bread crumbs, worcestershire sauce, 1½ teaspoons of salt and ½ teaspoon pepper. Mix until blended. Mound turkey mixture into ramekins, being sure to pack tightly. Place the ramekins onto a baking sheet lined with aluminum foil and bake in the upper third of the oven for 20 minutes.
Mix ketchup, brown sugar, worcestershire sauce, salt and pepper together in bowl. After 20 minutes of baking remove meat loaves from the oven and brush generously with sauce. Return meat loaves to oven and cook for 15 additional minutes. Remove the meat loaves from the oven and brush with light layer of sauce and serve.
