Roasted Shrimp
A fast and easy alternative to regular cocktail shrimp.
Serves 6-8
2 pounds (12-15 count) of peeled and deveined shrimp
2 tablespoons of olive oil
Kosher salt
Ground black pepper
Preheat oven to 375
Place shrimp on large sheet pan
Cover with olive oil, salt and pepper
Bake for 10 minutes
Arrange shrimp on platter with a dish of store-bought or homemade (recipe follows) cocktail sauce and lemon wedges.
Cocktail Sauce
½ cup ketchup
¼ cup chili sauce chili sauce
1 tablespoon of lemon juice
2 tablespoons of horseradish
Dash of hot sauce (to your taste)
