Brussels Sprouts with Bacon

Serves 4

1 1lb of brusels sprouts trimmed (petite or regular)Brussels Sprouts with Bacon
3 cups of chicken stock
1 tablespoon garlic
1½ tablespoon butter
¼ cup balsamic vinegar
salt and pepper to taste

Select either petite or regular sized brussels sprouts. If using regular sized sprouts slice in half.  Steam trimmed sprouts over boiling water for 2-3 minutes.  Bring 3 cups of chicken stock to a boil in a deep skillet.  Add brussels sprouts, and tablespoon of butter, cover and simmer for approximately twenty minutes or until sprouts are fork tender and broth is almost completely absorbed.

As broth is coming to a boil, place seven slices of bacon on baking sheet and bake at 400º for approximately twenty minutes then set aside to cool. Once bacon is cooled, slice into ½ pieces.

Add garlic, bacon,  remaining ½ tablespoon of butter and balsamic vinegar to sprouts; simmer for approximately five minutes until balsamic vinegar begins to caramelize.  Salt and pepper to taste.
