Sweet Spiced Nuts
Makes 2 cups
1 cup mixed unsalted nuts (walnuts, cashews, pecans, hazelnuts, etc.)
½ cup maple syrup
½ teaspoon cinnamon
¼ teaspoon cinnamon
¼ teaspoon salt
1 tablespoon lightly beaten egg white
Put oven rack in middle position and preheat oven to 350°
Toast nuts in a single layer in large shallow baking pan about 10-15 minutes.
Reduce oven temperature to 325° and line baking pan with parchment paper. Mix together syrup, cinnamon, nutmeg and salt in large bowl. Whisk egg white in a bowl until foamy, then add nuts and toss to coat. Transfer nuts to syrup mixture and toss to coat. Arrange nuts in layer on pan and bake, shaking occasionally, until golden brown, 20 to 25 minutes. Cool nuts completely on pan on a wire rack.
Note: Spiced nuts can be kept up to 2 week in an airtight container. Divided into cellophane bags and tied with ribbon these nuts make a lovely favor for your guests.
